Nutty Banana Oat Muffins (GF)
Who here loves a muffin and a coffee in the morning? I would bet maybe everyone, including me of course! But we want to indulge in a pastry without the sugar rush am I right? So, I present to you, my friends, this muffin filled with all the goodness you need in the morning and a rich flavor that will have you feeling totally satisfied. It seems everyone is talking about protein and fiber, and if that is your goal, like so many, these are for you! Myself and the kids like to pair these with a smoothie before school and I feel like this is such a win to have them set up for success for a day of learning. They are also so great for when a friend stops by for a visit, to serve with tea and coffee and good conversation, it's just the best.
With nuts, seeds, oats, pure maple syrup and banana, these muffins are giving protein, fiber, natural sugars, potassium and omegas, you can't go wrong with this recipe!
Nutty Banana Oat Muffins
- 1 cup old fashion oats
- 1/2 cup gluten free all purpose flour (or wheat flour)
- 1/2 cup almond flour
- 1 cup walnuts
- 1/4 cup hemp hearts
- 2 tbsp chia seeds
- 2 tsp baking powder
- 1 tsp baking soda
- 2 eggs
- 1/2 cup pure maple syrup
- 2 ripe bananas
- 1/2 cup chocolate chips
- pinch of salt
- 1 tsp cinnamon
- Preheat oven to 350F and grease muffin tin, we use coconut oil but you can use your preferred oil or butter.
- Combine dry ingredients in a food processor and blend until all combines and nuts are more of a flour texture, set aside.
- Mash bananas in medium sized bowl with a fork, then whisk in all other wet ingredients. Then add to bowl with dry ingredients and whisk thoroughly. Let sit for 5 minutes.
- Stir in chocolate chips, then spoon mixture evenly into the muffin tin. Place in oven and bake for 18-20 minutes or until baked through.
