Avocado Cocoa Pudding with Granola & Berries
So I think we can all agree, avocados are the moodiest of all the fruits. If you miss the day, no... moment, it decides to be perfectly ripe, that trendy little dude isn't so desirable to put on your toast. I have a solution for that.
My family and I eat avocado almost every day, for their healthy fats and omegas, in smoothies, on toast, on a salad and of course in the magnificent form of guacamole! But when they start to turn I throw them all in the blender and make up a batch of my kids favorite "chocolate treat": Avocado Cocoa Pudding. You know what gets me even more "cool mom points"? Serving that same pudding for breakfast with my Home Made Granola and some fresh strawberries or wild blueberries. The best part is I can feel good about my family eating this for breakfast because it is actually so nutritious and a great way to start the day.
This is also a great way to fulfill that chocolate craving after a meal or late at night when you might normally reach for a bar or ice cream. This tastes even better in my opinion. If you don't love your first spoonful that is totally okay, it is something to get used to, but I quickly became hooked after my first bowl. It is best served chilled and you can play with the sweetness by experimenting with the amount of maple syrup you like in it. I use dark cocoa in this recipe because I love the rich taste, if you prefer a different cocoa you can certainly use that.
If you plant to have this as a late night snack add some sliced bananas to the top! While the cocoa kicks the chocolate craving and the avocado fills your tummy with healthy fats, the magnesium and potassium in bananas actually aid in sleep. Can you tell this is a regular for me?

Avocado Cocoa Pudding with Granola & Berries
Ingredients
- 2 ripe avocados, room temp
- 1/4 cup maple syrup
- 1/2 cup coconut milk, or other plant based milk
- 1/3 cup dark cocoa
- 2 tsp hemp hearts, optional
Instructions
- Blend all in a high powered mixer or food processor until smooth. Refrigerate before eating.
