Mango Salsa

 Who doesn't love a nice refreshing salsa on a hot sunny day?! I am going to keep this one short and sweet just like the recipe.

There are so many possibilities when it comes to this salsa; serve on top of lettuce for a quick salad, on a fish taco, with scrambled eggs and black beans, as a side for a barbecue, or simply on its own with corn chips. It will quickly become a staple snack in your home for yourself and the kiddoes and works as a great dish for a potluck with friends and family.

Mango Salsa

  • 1 mango
  • 1 tomato
  • fresh cilantro or basil, chopped
  • fresh parsley, chopped
  • juice and zest of one lime
  • pinch of salt & pepper
  • 2 tbsp olive oil
  1. Dice mango and tomato.
  2. In a small bowl combine all other ingredients, then add chopped mango and tomato. Store in fridge until ready to eat. It is that simple. Enjoy!
