Indian Spiced Potato Wedges with Garlic Aioli


When my family repeatedly asks for the same dish, I know I have a winner.  These wedges were an experiment one evening when I was deep in a food rut. You know, when you are tired of eating all the same things over and over and ingredients like potatoes are no longer interesting to you. The day before I had made butter chicken from scratch and had the leftover spices already mixed in a glass jar in my pantry. I tossed the wedges in the mixture, drizzled with olive oil and hoped for the best. I got what I had hoped for. Spicy and thick, these wedges are a crowd pleaser! We often have these as the main in our meal with a side of salad, sometimes we serve with chicken wings, and they make a great side for a barbecue potluck with friends! The aioli dip is a must with these to cool down the heat, and luckily it is quick and easy to put together. Grab an apple cider and plenty of napkins, and enjoy this explosion of flavour you never expected from a potato.


Indian Spiced Potato Wedges with Garlic Aioli

1. Aioli

Ingredients
  • juice of half a lemon
  • 1 clove crushed garlic
  • 1/2 cup real mayonnaise
  • pinch or salt and pepper
Combine all ingredients and store in the fridge until ready to serve with spiced potato wedges.

2. Spiced Potato Wedges

Ingredients

      *1/2 teaspoon of each:
  • cayenne pepper 
  • garlic powder
  • paprika
  • turmeric
  • red chili powder
  • garam masala powder
  • ground coriander
  • cumin
  • salt
  • 4 tbsp olive oil
  • 5 yellow potatoes
Instructions
  1. Line baking sheet with parchment paper, preheat oven to 375F.
  2. Combine spices, set aside.
  3. Peel and cut potatoes into thick wedges, drizzle with olive oil then toss in spices until coated evenly.
  4. Place each wedge on the parchment paper so they do not overlap. 
  5. Bake in oven, turning once, for 35-45 minutes or until cooked through. The exact time depends on the thickness of the wedges.  
  6. Serve hot with Garlic Aioli and enjoy!
