Tuna Pasta Salad

A cold pasta salad can be such a great addition to any meal or take away lunch, or school lunch for the kids. It's great to keep in the fridge for a quick bite, or to take along to a get together with friends or family. This is another recipe inspired by one of my mom's creations that I have loved and eaten often over the years of my life. This meal, to me, is comfort food at it's best, and most nutritious so I love to share it with family and friends, and now you too.

Like any salad, the amount of vegetables you add to this is completely up to you. You can add a little more, a little less, the measurements listed below are a guideline to help you find your own perfect balance between pasta, veggies and vinaigrette. Experiment with what you like most in the recipe and add a little more of what you enjoy. That's how I came up with this version of my mom's recipe which I now love to make and share with her.

Tuna Pasta Salad
Makes 1 large bowl to share

Ingredients
  • 1 box of fusilli pasta (use gf or chickpea pasta for added protein and fiber)
  • 1 can  flaked tuna, drained
  • 2 stalks celery, diced
  • 1 red bell pepper, diced
  • handful of chopped spinach
  • 1 can chickpeas, drained and rinsed
  • 4-6 sundried tomatoes (in oil) diced
Vinaigrette
  • 1/4 cup vinegar
  • 1/2 cup olive oil
  • salt & pepper to taste 
Method
  1. Bring water to a boil and cook pasta to box instructions.
  2. in the meantime, add all ingredients for the vinaigrette to a large bowl and whisk to combine, then add tuna and diced veggies and set aside until pasta is cooked, drained and cooled. 
  3. once cooled add pasta to vinaigrette and toss to coat. If you feel you would like more vinaigrette make and add more to taste and make note for next time!
